Cook pasta according to package directions. Meanwhile, in a large nonstick skillet, melt 1 tablespoon butter over medium-high heat.Add bread crumbs; cook and stir until golden brown. For the cheese sauce: In a large saucepan, melt the butter over medium heat. Whisk in the flour and continue to whisk and cook for about 2 minutes. Very slowly add the milk, a little at a time, whisking constantly. Once all the milk has been added, cook, stirring frequently until the sauce thickens, about 8-10 minutes.

Boil the pasta, drain. Make the cheese sauce by combining a fat (butter), and starch (flour), then whisking in the milk products. Cook the sauce until it’s nice and thick. Add in shredded cheeses, stir well. The only mac and cheese I knew came in a box, and the powdered cheese was way better than the canned. Years ago I started experimenting with macaroni and cheese to serve alongside my mini meatloaves, and in the process learned how to make white sauce.

1) Heat a medium, deep skillet over medium heat. Add oil and butter. When butter melts into the oil, add flour and combine. Gently cook, whisking flour and butter together, until smooth and flour has had a chance to cook, about 3 minutes. Slowly add milk while continuing to whisk. Gently bring milk to a bubble while stirring frequently.

2) Allow the milk to thicken a bit, then stir in 2 cups of shredded cheddar cheese a handful at a time. Season sauce with nutmeg and cayenne. Taste and add a little salt, if you like. Add cooked pasta to sauce and coat completely by turning over and over in the cheese sauce.

3) Transfer to a baking dish and top with remaining cheese. Place baking dish under a hot grill and brown the cheddar cheese on top.
